Low Carb Mushroom Soup

  1. One-fourth cup of butter
  2. Five cups of coarsely chopped fresh mushrooms
  3. Half cup finely chopped onion
  4. One minced garlic clove, 
  5. Half teaspoon salt
  6. Half teaspoon ground black pepper
  7. One-fourth teaspoon dried thyme
  8. One carton of chicken broth ( approx 32 ounces)
  9. Two cups of heavy whipping cream
  10. One package of cream cheese (approx 4 ounces)
  11. Two tablespoons sherry


First, you need to soften butter in a large saucepan using medium heat. You need to add mushrooms, onion, and garlic; cook and stir till tender. Cook about 10 mins. Put some salt, pepper, and thyme; cook and mix till combined, about 1 min. Mix in chicken broth, heavy cream, and cream cheese. Then you need to minimize reduce the temperature to a low simmer and pour in sherry. Cook, constantly stirring, until flavors are well incorporated, about 45 mins.
